"Hands down the best lamb I have ever tasted"
Lamb is loved by most people. However, there are huge differences between the lamb bought in halal butchers and that offered by small dedicated companies such as ourselves.

Organic vs. Naturally-reared
All our lambs are either what we call naturally-reared or Soil Association certified 'organic'. The difference is simple. We can legally only sell something as organic if it is approved by one of the certifying bodies such as the Soil Assocation. Organic lamb is therefore approved by, in our case, the Soil Association. Naturally-reared lambs come from farmers with organic principles and methods but can either not afford or do not want to get certified. As a result we can not sell this lamb as 'organic'. Aren't all lambs kind of organic?
Some people assume that because a lamb is a lamb that it will by default have a natural/organic life. Although it is true that lamb production is slightly less intensive than other animals there are aspects which we see as undesirable.
A few examples:
1) in order to control external parasites, sheep must he dipped in an insecticide. It is now being realised that the most common conventional dips contain potentially dangerous chemicals which have been prohibited under organic regulations.
2) internal parasitic worms are a headache for any sheep farmer. The conventional doctrine for control is to routinely dose the animals with drugs. The organic approach is to say that prevention is better than cure, and that proper rotation of pastures should enable the farmer to avoid re-infection of his sheep flock.
3) lambs traditionally are born in spring (with natural exceptions of course). However, due to demand some farmers inject ewes with hormones to change their natural cycles.
4) Organic lambs can only feed on organic pasture, i.e. the grass they eat has not been treated with pesticides, chemicals, etc.
In addition to the above examples we are also passionate about animals being treated compassionately. So on top of guaranteeing that your meat is fantastic quality, we also guarantee it has led a safe and happy life.
A note about lamb
Not all lamb is the same.
Spring lambs which are born in the previous January/February/March window are the highest quality lamb. However, due to their age they weigh less - after slaughter usually around 15-18 kg.
Store lambs are those that are about a year old. They will weigh more but their meat becomes slightly less succulent.
The lamb you buy depends on the time of year you buy.
